Call to bookAbout Chispa Bistró
Chispa Bistró is the restaurant of Argentine chef Juan D’Onofrio on Calle del Barquillo, between Chueca and Banco de España, with one Michelin star and one Repsol Sun. It grew out of its team’s travels around the world and a calling to cook good produce, reinterpreting traditional recipes with dogma-free cooking: open, international and made for sharing, with the season as its beacon. The grill is the star, with the produce, and sauces play the supporting role; sweetness and acidity lift the flavours, and the techniques include curing, fermenting, pickling and smoking. A team of eight looks after kitchen and dining room with the same idea: sharing with the guest. Meals are three menus, all with wine pairing included, from Ascua, of six courses, to Fuego Loco, with twelve wines. There is a private room for groups of 6 to 12. It opens Wednesday to Saturday.
