Call to bookAbout Pabú
Pabú is the restaurant of chef Coco Montes, who trained at L’Arpège, the three Michelin star restaurant in Paris, next to the Santiago Bernabéu stadium. It holds one Michelin star and one Repsol Sun, and its cooking is refined, with French technique and a strong plant-based inspiration, a measured presence of protein and delicate textures. It works by “micro-seasons”: every day eight new dishes are prepared according to what the suppliers bring. There are three tasting menus, named after Coco’s father and mother, and a daily menu, and one classic has stayed unchanged since opening: the Madagascar Bourbon vanilla soufflé with pink-pepper salted caramel. The cheeses come from Fromagerie Antony. The cellar, with more than 600 labels, is served entirely by the glass thanks to Coravin, and is run by sommelier Patricia García; the dining room by Rita González. They adapt the menus to vegetarian, vegan, gluten-free or lactose-free diets. The space is accessible, has valet parking and hosts tailor-made celebrations.
