El Señor Martín is a restaurant devoted to fish and shellfish on Calle del General Castaños, next to Alonso Martínez, “from sea to fire”: every piece is the absolute benchmark of its kind and is chosen daily after talking to fishermen, producers and scouts at the fish market. It works with small-scale inshore artisan fishing from the Spanish coasts, little-known species and the essential ones, which arrive within hours, and stands for minimal intervention: embers, steam, charcoal, stews, frying, pickling or raw. The menu changes every day according to the state of the sea; the highlight is “Lo de hoy”, the unique pieces sold by weight, such as John Dory, Foz sea bream, turbot or red bream, ready for the grill whole or in cuts. It was founded by Javier Rodríguez Tur from Cádiz, who started in 2008 with two fishmongers in the Chamberí and Chamartín markets and has stalls in the Mercado de San Miguel. The space, with eclectic interiors and an open kitchen, has two floors: upstairs, tables and a food bar, and downstairs a more intimate dining room and a private room.

Tuesday to Saturday, 1:30 pm to 11 pm; kitchen 1:30 pm to 4 pm and 8:30 pm to 11 pm. Sunday and Monday, closed.
