Call to bookAbout Ramón Freixa Tradición
Ramón Freixa Tradición is chef Ramón Freixa’s Spanish restaurant on Calle de Velázquez in the Salamanca district, with a Repsol Sun and a Michelin Guide selection, sister to his Ramón Freixa Atelier. It is his tribute to the culinary heritage he grew up with, in his grandparents’ bakery in Castellfollit de Riubregós and in the family restaurant, Freixa Tradició: root cooking, honest and unfussy, that revives recipes, produce and great classics of the Spanish repertoire with a contemporary eye, with produce as the star and technique as its ally. It occupies the main floor of a space designed by Alejandra Pombo, with four dining rooms each with its own personality, two private rooms, a cocktail bar, wine cellars and an open kitchen; lively at lunchtime and intimate at night. The menu offers Iberian hams and charcuterie, croquettes, gildas, oysters, seafood such as carabinero prawn with sobrasada or red prawn, fish baked or grilled, cannelloni with foie and truffle, boeuf bourguignon or aged beef chops. It opens every day with the kitchen open from 1 pm to 12:30 am, and at lunchtime there is a chef’s table facing the kitchen.
