Call to bookAbout Gaytán
Gaytán is chef Javier Aranda’s restaurant on the service road of Príncipe de Vergara in Chamartín, with a Michelin star since the very year it opened, 2016. Aranda, who started in hospitality at 16 and worked at El Bohío, Ars Vivendi, Urrechu and Santceloni, became in 2014, aged 27, the youngest chef in the world to win a star, with La Cabra. Gaytán is his cooking in its purest form: roots, tradition and avant-garde, respect for produce and season, and dishes that are drawn before they are cooked. The dining room revolves around an oval, barrier-free kitchen where you can watch every dish being made, with tableware and glassware chosen for the experience. Meals are two tasting menus, Inaurem and Javier Aranda, or à la carte, with pairings by sommelier Valentín Checa, one of Spain’s seven Advanced Sommeliers. There are cooking classes and showcooking with the chef, and spaces for events of 10 to 140 people, plus catering.
