About El Invernadero

El Invernadero is Rodrigo de la Calle’s restaurant on Calle de Ponzano, Chamberí’s best-known eating street, and the leading address for plant-based haute cuisine in Madrid. It has held a Michelin star without interruption since 2011, the Green Star for sustainable cooking since 2020 and two Repsol Suns, and in 2024 it was named the world’s best vegetable restaurant. With botanist Santiago Orts, De la Calle created gastrobotánica, the discipline that treats roots, leaves, stems, fruits and seeds as the noble produce around which the whole service is built, and he signs everything that leaves the kitchen; he holds Spain’s National Gastronomy Award and has advised Joël Robuchon. There is no à la carte: two lines of tasting menu of fifteen to twenty courses, rebuilt every week with the season. Vegetalia is one hundred per cent plant-based, with nothing to request, and Gastrobotánica, for omnivores, adds fish, meat and shellfish. You can eat at the counter, watching the team at work. It serves dinner Tuesday to Saturday in two sittings, and lunch only on Saturdays and public holidays.
