Estimar Madrid is Rafa Zafra and Anna Gotanegra’s seafood restaurant on Calle del Marqués de Cubas, a few steps from the Neptune fountain, sister to Estimar in Barcelona, which Ferran Adrià called “the seafood restaurant of the 21st century”. Zafra, who trained at El Bulli and Hacienda Benazuza, pays tribute to the classic produce-led restaurants with minimal-intervention cooking: fish and shellfish selected every morning, mainly from the Roses fishermen and Cap de Creus and also from Galicia, Huelva and Cádiz, served raw, boiled, pan-cooked, Andalusian-fried or over embers. The queen of the house is the Roses red prawn, alongside the Gotanegra battered baby squid with their ink mayonnaise, the roast Isla Cristina langoustine, razor clams in warm escabeche, the goose-barnacle gilda and the baby langoustine carpaccio in homage to El Bulli 1995. The space, by Sánchez Guisado Arquitectos, repeats Barcelona’s stone and red-brick arches, with an open kitchen and a private room for ten.

Shellfish and wild fish are at market price, depending on the season and the day’s catch.

Raw and cured: Marennes-Oléron oysters, XXL clams from the Ría de Arousa, Cantabrian anchovies, the Estimar gilda with Roncudo goose barnacle, baby langoustine carpaccio “Homage to El Bulli 1995”, Roses red prawn tartare with caviar.
Boiled and sautéed: steamed Roncudo goose barnacles, Roses red prawn boiled in seawater, pan-cooked razor clams with warm escabeche, clams in salsa verde or Galician style.
Andalusian fry: battered baby squid with ink mayonnaise, lemon-marinated anchovies, sea anemones, ray in Sanlúcar marinade.
On the grill: Isla Cristina langoustine, Roses espardenyes and red prawn, wild sea bass, sole, scorpion fish, turbot and red bream.
No bones: cured rubia gallega beef and aged beef rib-eye.
Seasonal: bikini with smoked salmon tartare and caviar, sea urchin, baby eels, lobster, the Estimar ramen or seafood chickpea stew with spider crab.
Desserts: Estimar cheesecake, flan, rice pudding, torrija…

Bookings
Private room for ten. For tables of 5 or more Tuesday to Thursday, and 3 or more on Fridays and Saturdays, a card is required as a guarantee; free cancellation up to 48 hours before.

Opening hours
Tuesday to Saturday, 1:30 pm to 3:30 pm and 8:30 pm to 10:30 pm. Sunday and Monday, closed.
