Call to bookAbout Paco Roncero Restaurante
Paco Roncero Restaurante sits at the top of the Real Casino de Madrid, on Calle de Alcalá. It opened in 1990 as La Terraza del Casino, Paco Roncero has run it since 2000 and since 2019 it has carried his name. It holds two Michelin stars, three Repsol Suns and a place in the 50 Best Discovery guide, and its chef is one of the ninety-seven cooks in the world with three knives in The Best Chef Awards. The modern, cosmopolitan interior is by designer Jaime Hayon, and the outdoor terrace by Julio Guixeres. Its cooking is a dialogue between the Madrid of always and the one to come: dishes from the city’s memory, such as garlic prawns, Madrid-style red mullet or tripe, alongside avant-garde creations such as the airy black truffle tart or the airy oxtail Wellington. There are three menus, from 15 to 25 creations, and a cellar of about 800 labels run by María José Huertas, number one in Spain’s Top 100 Sommeliers in 2024. It opens for dinner Tuesday to Saturday and for lunch Thursday to Saturday.
