About Kappo

Kappo is the home of Madrid-born itamae Mario Payán, Madrid’s “nigiri shokunin”, and one of the city’s temples of traditional Japanese cooking, with two Repsol Suns and a Michelin Guide recommendation. It opened in Chamberí in 2016, after the chef experienced in Japan the essence of kappo cooking, that of taverns where food is cooked in front of the guest, and in 2025 it moved a few metres away, to number 44 Bretón de los Herreros, with a nine-metre Cantabrian walnut counter for 21 diners, built to his specifications, and a dining room for 22 more. There is no fixed menu: it is an omakase in which the chef chooses and serves between 15 and 20 dishes live, with seasonal produce. Its secret is ageing: 18 to 20 types of fish, caught without suffering, aged for 3 to 26 days. The cellar holds some 500 references and 40 sakes, with sommelier Alberto Juzgado there from the start, and there is a Whisky Club with Japanese cocktails. It also prepares takeaway orders.
