About EMi

EMi is the first solo restaurant of Extremadura-born chef Rubén Hernández Mosquero, on Calle de Gaztambide in Vallehermoso (Chamberí), and one of the names of the year: four months after opening it won a Michelin star in the 2026 Guide and a Repsol Sun. Its cooking starts from the principles of New Nordic Cuisine, joins them to Korean and Japanese techniques and builds them with seasonal Spanish produce: technical, honest, unfussy and with depth. Hernández Mosquero has worked at Atomix in New York, José Andrés’s Minibar, Noma in Copenhagen and Eneko Atxa’s Azurmendi. It offers a single surprise menu of several courses for a maximum of twelve guests, in a two-floor space with an open kitchen, a counter and a private room. The cellar, with more than a thousand labels, is run by Miguel Ángel Millán, named the world’s best sommelier by The World’s 50 Best in 2023. It opens Tuesday to Saturday, for lunch and dinner.
