Call to bookAbout Filandón
Filandón is the countryside restaurant of Pescaderías Coruñesas, “the countryside in the city”, set in the Monte de El Pardo, one of the best-preserved Mediterranean forests in Europe, without leaving Madrid. Its name comes from the Leonese filandón, the gathering around the fire where stories were told, ballads recited and people sang and danced, and fire is at its heart: the grill, the oldest cooking technique, is here the most modern, because it preserves all the qualities of the produce. The sister house of O’Pazo, El Pescador, Desde 1911 and Lhardy grills the fish of the day, such as turbot, blackspot sea bream, line-caught hake, hake cheeks or Evaristo sole, and meats such as old-cow or grass-fed wagyu chops, plus dry, thin-layered rice dishes, shellfish and a wood-fired oven for pizzettas. The space, with bright dining rooms looking out over the countryside, a large terrace and gardens, is much sought after for long weekend lunches and for events and weddings.
