About Toki

Toki is Marcos Granda’s Japanese counter on Calle de Sagasta, between Bilbao and Alonso Martínez, with one Michelin star. Toki means “time”, and that is how the experience is built: a journey through the history of sushi, from the present to the past, to understand what is to come, with a single omakase menu based on the strictest seasonality of the market. It is one of the most intimate restaurants in Madrid, a counter for only six guests where chef Singharaj, France’s sushi champion in 2024, prepares every piece in front of the diner, with Ángel Gutiérrez running the dining room. Service starts at the same time for everyone, so punctuality matters: there is a 15-minute grace period and latecomers join the menu wherever it has reached. It opens Wednesday to Saturday, with one sitting at lunch and another in the evening. There is no vegetarian or vegan menu and it is not designed for children under 12.

How to book
Open Wednesday to Saturday, lunch and dinner (sittings at 1:45 pm and 8:45 pm). A card is given as a guarantee to confirm the booking, with no charge; cancellations or changes at least 48 hours ahead.

Before you go
A counter for six guests: the menu is served to everyone at the same time. 15-minute grace period; more than 40 minutes late and the booking is cancelled.
No vegetarian or vegan menu; allergies are considered if notified in advance.
No pushchairs and no high chairs.
