Call to bookAbout Quimbaya
Quimbaya, by Bogotá-born chef Edwin Rodríguez, is the first signature Colombian restaurant in Spain with a Michelin star, which it has held since 2022, like its Repsol Sun, both renewed every year up to 2026. It is on Calle de Zurbano in Chamberí, and its motto is “lifelong cooking, seen through today’s eyes”: exoticism, avant-garde and Colombian identity. Its tasting menus travel through the Caribbean, the Pacific, the Andes, the Orinoquía and the Amazon, Colombia’s food regions, linked by the stories that inspire the chef, and each dish reaches the table with its tale. Among its classics are the egg arepa with scallop, the Bogotá empanada and flank steak with native potatoes in hogao sauce. Colombian wines and ferments are served in pairings designed for each menu. It seats 55, with a bar area, a dining room facing the open kitchen and a private room for six, and it does events and catering. Edwin Rodríguez, with more than 25 years in kitchens, is a Colombia Country Brand Ambassador.
