About Ugo Chan

Ugo Chan is a signature Japanese restaurant on Calle de Félix Boix, next to Plaza de Castilla, with one Michelin star and two Repsol Suns. Its name comes from the chef, Hugo: his maternal grandfather, Emilio, had business ties with Japan and at home they called him “Hugochan”, the affectionate diminutive a Japanese grandfather uses for his grandson. The house reflects on Japanese cooking and its links with the world, with produce and season as its leitmotiv, and mixes in Madrid references without hang-ups: Madrid-style tripe gyozas, squid nigiri “onioned at the table”, suckling-pig ear temaki with brava sauce or a tribute to Robuchon with toro tartare and caviar. You can order à la carte or the omakase menu, which the team adjusts on the spot to each table’s tastes and appetite. The cellar backs small producers, with a long list of wines, sakes and sparkling wines. Next door is Ugo Chan Bar, with cocktails, whiskies and sakes among books, open non-stop until half past one.
