About Sen Omakase

Sen Omakase is chef Steven Wu’s Japanese restaurant in Chamartín, with one Michelin star and one Repsol Sun. Wu inherited his love of cooking from his father, trained in Spain and Belgium, learnt the craft of sushi from masters in Tokyo and worked in Kyoto, the cradle of kaiseki cuisine, at the renowned Uosaburo, a Michelin-starred house with nine generations behind it. That is where his offer comes from: an immersion in Japan, its art, its culture and its food, with a single omakase menu of 30 to 35 bites that blends sushi and kaiseki cooking and is served across four different rooms during the experience. It combines local produce with Japanese produce and follows kaiseki seasonality: hashiri, the arrival of new flavours; shun, their peak; and nagori, the farewell. That is why the menu changes within each season and takes a turn with every new one. The cellar, with more than 250 labels from Burgundy to Japan, includes a wide selection of sakes, and the service follows the Japanese concept of hospitality, omotenashi.

Some bites from the summer 2026 menu: oyster and caviar ice cream, shima aji nigiri, miso salmon, hamachi and melon, courgette flower tempura, eel temaki, smoked bonito tataki, otoro nigiri with caviar, cold almond chawan mushi, Miyazaki A5 wagyu with plum, red prawn gunkan, atsuyaki tamago and warabi mochi.

The experience is served across four different rooms and the menu changes with the season.
