La Tasquería is the restaurant of Javi Estévez, who since 2015 has taken offal, a humble, traditional, make-the-most-of-it product, into fine dining, with a Michelin star since 2019 and a Repsol Sun since 2020. Its motto is #SomosCasqueros (we are offal lovers): “visceral cooking”, intense and from the gut, which cooks offal even for people who don’t eat it, with sustainability and zero waste as its banner. In 2024 it moved to Calle de Modesto Lafuente in Chamberí and kept its star. Veal, lamb, pork, rabbit, rooster, duck, tripe, liver, trotters, tail, kidneys, head, tongue, tendons, heart, brains or combs: here they take on everything, on a menu for sharing and in three set menus that can be changed and adapted to each guest. Its classics are pig’s trotters with fried artichoke and langoustine, cockscombs with carabinero prawn and confit, fried suckling-pig head; in its first ten years it served more than 52,000 pig tails and 72,000 kilos of tripe, trotters and snout. Javi Estévez was Madrid Fusión’s Revelation Chef in 2016. It also does events and catering.

Menú Tasquería 2026 (snacks, 4 dishes and dessert): €69. Veal tongue salad in escabeche, lamb neck mole, pig snout with brava sauce and smoked eel, duck hearts with corn and raspberry.
Extended Menú Tasquería (snacks, 5 dishes and dessert): €85. Adds rabbit kidneys in stroganoff sauce.
The Menu: €115. House charcuterie, crispy cockscomb, fried lamb brains, foie and Iberian pâté en croûte, lamb chorrillo, peas with tendons, bluefin tuna meunière, sweetbread sando and stewed venison, with two desserts.
Extras: confit, fried suckling-pig head, €36; lamb brains in black butter, €16; cheek taco with carabinero prawn, €18; tripe, trotter and snout stew, €20.

Opening hours
Monday to Thursday, 1:30 pm to 3:30 pm and 7:30 pm to 10:30 pm. Friday, 1:30 pm to 3:30 pm and 8:30 pm to 10:30 pm. Saturday, lunch only. Sunday, closed.
