Ricardo Sanz Wellington is chef Ricardo Sanz’s restaurant in the Wellington hotel, on Calle de Velázquez next to the Retiro, where he has cooked since 2007. Sanz is the pioneer of Japanese cooking in Spain and the leading name in Japanese-Mediterranean fusion: he was the first chef in the country to win a Michelin star with an international-cuisine restaurant, and this one keeps it in 2026, with two Repsol Suns. In 2021 he relaunched his own group, Grupo Ricardo Sanz, which also runs Kyoshi Las Cortes. From the sushi bar you can watch the chef at work, and the dining room is led by Francisco Santos. His cooking joins Mediterranean produce with Japanese technique in fish cuts, nigiri and hot dishes: among those most mentioned by guests, butterfish nigiri with truffle, bluefin tuna, tuna belly, king crab soup and the squid sandwich, one of his classics. Wine, sake, tea and beer lists come with the advice of the sommelier team. The space is wheelchair accessible.
