Call to bookAbout Saddle
Saddle occupies, in Chamberí, the premises of the legendary Jockey, the restaurant that shaped 20th-century Spanish gastronomy, and it was born to become a “contemporary classic”. It holds one Michelin star and two Repsol Suns, and it swims against the tide: instead of tasting menus, it brings back the great à la carte restaurant, with half portions so each guest can build their own four or five-course menu. Its cooking revives classic recipes with nods to nouvelle cuisine and the great chefs of the past, such as tripe in homage to Jockey, veal shank in homage to Santi Santamaría, sole meunière or pigeon, and the dining room revives the technical service of the last century: trolleys of cheeses, butters and Dry Martinis. It is spread over two floors: downstairs, the bar, focused on cocktails and with one of the longest spirits lists in central Spain, and the main dining room, with a fireplace and a window onto the kitchen; upstairs, a whole floor of private rooms for 2 to 20 people, the only one like it in Madrid. On Friday and Saturday evenings it also offers a Chef’s Table next to the kitchen.
