Call to bookAbout Santerra
Santerra is the flagship of Grupo Santerra, on Calle del General Pardiñas in the Salamanca district, with one Michelin star and one Repsol Sun. On the ground floor is the fine-dining restaurant, El Monte Bajo, “a gastronomic forest in Madrid”; upstairs, La Barra, the house’s Madrid-style bar, with wines by the glass. Chef Máximo Benages runs the kitchen and Owen Duarte the dining room. Its cooking is about produce, technique and season, reinterpreting traditional dishes with a clear focus: the hills, game and the cooking of La Mancha, inspired by childhood memories. It only works with environmentally committed suppliers: organic vegetables, culled or early-season game, small farmers and herders and wines from craft wineries. There is an à la carte menu on weekdays, with dishes such as its Iberian ham croquette, wild rabbit rice or royale of mallard, and two tasting menus: Monte Bajo and Veda Abierta, a journey through game cooking. The cellar holds more than 350 labels, and there is a cellar table for four and a private room for 6 to 10.
