About Smoked Room

Smoked Room is Dani García’s fine-dining restaurant in Madrid, in the Hyatt Regency Hesperia hotel on Paseo de la Castellana. It entered the Michelin Guide with two stars at once, something no restaurant had achieved since 1936, and in 2026 it added two Repsol Suns. It is an intimate space, a counter for only 14 guests facing the kitchen, where smoke and embers rule: fire transforms every fish, vegetable, seafood or meat, and the base is Japanese cooking, with seasonal produce and techniques that lift textures and flavours. The dishes change with the seasons and are not revealed in advance, guided by chef Massimiliano Delle Vedove, who runs the kitchen, and by sommelier Luis’s cellar. There are two tasting menus and several pairings, and the restaurant can be booked exclusively for private dinners, corporate events or celebrations. It opens Tuesday to Saturday, for lunch and for dinner until 1 am, and smart casual dress is recommended.
